Fluffy Mashed Potatoes (from The Vegan8)

Oh MY! These mashers are not just for the Holidays! But the holidays are upon us, so add this to your menu!

There was never much mash potato making in our kitchen, until I tried these. We are not a family who eats a ‘traditional’ Thanksgiving meal but there is a  love for mashed potatoes. Since these were so simple and flavorful, I have decided that this is definitely a recipe to be made whenever mashed potatoes are requested!

 

Brandi over at the Vegan 8 is genius with her minimal ingredient recipes and I love trying them out. We have had success with just about every recipe we have tried.  This dish is buttery and creamy and they do not have any of those ingredients in them!! Win Win!!

Total time: about  30 minutes ~ Makes about 2 cups

I did not completely peel all of the potatoes and they mashed up wonderfully. Yukon golds provide a rich butter flavor to the recipe.  As a result, I would definitely suggest not using any other potato for this recipe. I followed Brandi’s recipe and did not add any additional flavoring. The result was devoured.  Maybe next time I will play around with some chives or thyme.

Apple Walnut Salad

Sometimes simple dishes can be a tad bland, but I have learned, they can also pack a flavorful punch and this salad does just that. The fresh, crisp ingredients tantalize the taste buds all while leaving bellies satisfied :)  Lemons and  apple cider vinegar add so much flavor to a salad and I have played around trying to get a solid balance between the two.  This salad was a huge hit the other night and thank goodness I made extra so we had it for lunch the next day.  I haven’t played with other ingredients other than what is listed below, but if you wanted to add more toppings go for it.  We prefer it as is.

Tempeh Lettuce Taco Boats

Tacos are made often in this house and we definitely have our favorites, but we are always excited to try new tacos and new recipes.  The weather has been a tad hot, like +104ºF so I would like to avoid using an oven as a form of cooking.  Even using the stove to cook the tempeh was pushing it.  Shannon at the Glowing Fridge is a ray of sunshine and we have certainly found some favorites from her!  I am doing my best to use leafy greens for tacos instead of tortillas to change our meals up and this recipe tastes so flavorful and refreshing with  romaine leaves.  I used cashews for the ‘sour cream’ as I am not able to tolerate tofu and this topping is a must with these tacos.
