Typical Breakfast

When I worked full time as an apparel buyer I was up at 5 AM to the gym and out the door to work by 7:30. That typically meant I was eating my breakfast at my desk when I arrived at work. I kept a bag of rolled oats, slivered almonds, dried cranberries, local honey and cinnamon in my desk for most of those mornings that I did not eat before I left the house. Occasionally I would manage to eat toast with almond butter on the way into work, as it was a 35 minute drive. Those are days of the past, but my mornings are still very similar when it comes to the early rise to the gym, especially during the winter when it is a bit more wet in the mornings. Except now, I usually eat with my kids before they head off to school and I don’t keep food in a desk anymore :) The variations have changed and are not as plain as I used to eat it, but I still enjoy those basic ingredients from time to time.

Fallnola

The girls have been putting in a request for granola lately and it is something that I have wanted to try. Our mornings and evenings have been cooling off which is feeling a little like fall as well as making it tolerable to use the oven more. Ava has been on a smoothie bowl fixation and the granola is what she said was missing. The evenings have been long with all the baking and taste testing, I figured granola should be pretty easy to put together. Well it sort-of was, getting the spices (flavor) down was a little harder than I realized because I wasn’t measuring, I was adding and tasting until I liked the taste. After the second batch, I felt I had it figured out. One of the convenient things about granola, you can kinda add what you want in it. This is the recipe for one of the batches I made and the flavor had a “fall” feeling.

Overnight Oats

Overnight oats, who’d of thunk it?!  Well, I must say I am glad someone did!  I had been reluctant to try overnight oats because eating cold oatmeal just didn’t sound appealing to me. As part of my daily goal to experience new things (big or small) and go out of the box/my comfort zone, I gave this a whirl. I must say, I enjoyed them, as did the hubs. He even made is own!

Baked Pumpkin Rounds

The other night I had decided to create a brownie using avocado, let’s just say it was an epic disaster. As I was mixing it and pouring into the pan, I thought, this would be a good “mousse” type dessert. But I second guessed myself and continued on. After all was done in the oven, I realized I forgot to add an ingredient so it came out like dark sludge. Well that was that, I needed to get a few things dialed in and try it another night. I then decided, I should try the breakfast oatmeal I make and tweak it a little and make some muffins. So with paper and pen I began the chicken scratch and pouring into bowls. Once they were placed in the oven, OH the smell was filling up the house! It was like a fall party. The kids were asking what smelled so good and I replied, I hope they taste as good as they smell! Success came from the oven and multiple testers have agreed these are tasty baked rounds. We just couldn’t decide if they were breakfast, a snack or a treat… they are just yummy!!

Anytime Cookies

The evenings have been cooling down enough for me to use the oven without feeling like I am in one. I have a few recipes on my list to try but I was also in the mood to gently experiment. I am still working on that development part of the recipes and feel I have quite a ways to go before I am there so tweaking and improvising some recipes are where I am comfortable at the moment. These “cookies” are full of yumminess (see notes at bottom of recipe) for breakfast, lunch or snack. I have been avoiding oil when cooking or baking and sometimes replacements work great and other times, not so much. I wanted these to be oil-free and I was successful in achieving something that was edible and approved by the family. I used applesauce and almond butter instead of oil. Working on how much to add was a bit tricky but I got it to a consistency and taste that worked. These are great for school lunches or after school snack too!

Blueberry Oat Muffins

The girls have been asking for muffins and I just haven’t had it in me lately to use the oven when it is 98 degrees outside.  Because of the heat, it leaves me with baking at 6 AM or 9 PM when it cools down and I have put other things ahead of baking the muffins. So this morning I was up quite early and did my morning routine of Headspace, posture stretches and a cardio workout as today was a day off from running. I threw in some laundry and headed to the kitchen. I had gathered a couple recipes that I was contemplating on making and I had some ingredients for one, but not all and the same for the other recipes. I decided to compile them and use what I had and came up with a recipe I felt would work. Best part is there is not oil or refined sugar! Away I went mixing and baking. I managed to only do one batch of 12 because it was starting to warm up and I didn’t want the oven on much longer.  The rest will be made tonight or early tomorrow so they can be fresh and ready to eat for breakfast or for a snack.
