Pad Thai Salad

Always looking for ways to add more raw vegetables to our meals with out making the same type of salad each time. My visit to farmers is always a success and I look forward to using all the gems I come home with. The menu was planned for lettuce wraps but I needed to use some zucchini and as much as I wanted to make Zucchini Brownies, I had to focus on dinner. I came across the adorable Ilene at The Colorful Kitchen and found some recipes that I will be testing with the family and first up was her Pad Thai Salad. This dish is quite satisfying just on it’s own and quick and easy to make.

Berry Baked Cookies

There is a corner stand at an intersection near where I live and they are local farmers who grow nearby (like literally less than a mile from the stand) and they are my go-to fill in on berries. Now I normally purchase organic berries (produce in general) whenever possible but lately it has been difficult when it comes to berries. The farmers say they do not spray, but that doesn’t mean what was in the ground prior to growing has been. It is a fine line for me but driving 35 minutes one way isn’t ideal so I make adjustments when necessary. The local stores organic berries are from Mexico and I would rather support my local farmer.The organic berry guy at farmers hasn’t had much to offer yet. I just need to be patient but I love me some berries!

Asparagus Fries

Spaghetti with Asparagus Fries

I decided to try making a spaghetti sauce with fresh herbs instead of dried because when I use fresh herbs for anything the outcome of the flavor is so savory. The typical ingredients I use are a couple chopped veggies (anything that is in the fridge, carrots, celery, zucchini, eggplant are good options) diced and crushed tomatoes with garlic, basil, oregano and thyme adding in a shake of pepper. I had found a recipe that was quite similar to what I use and saw that all the ingredients were put in a crock pot and fresh herbs were listed, so I went with the suggestions from the recipe Crockpot Red Sauce

Over the years we have family, husbands/wives, friends, acquaintances near and far, co-workers and a plethora of people in and out of our lives. There are some that appear in our lives unexpectedly or have been there the entire time that teach us a little something about ourselves that we may not have known. Some are there to show us who we do not want to be.

Rolled Tacos

This weeks meal plan has been off to a great start. I have made all new recipes so far, extending my “something new Wednesday’s”. I have been making an extra meal for our friends (family of 4) to help alleviate some of the chaos of trying to get dinner ready in between work and sports. Since it was Cinco de Mayo yesterday, the menu this week took on a Mexican theme. I made Rolled Tacos, courtesy of Veggies Don’t Bite and tweaked them a bit as I used what I had in the house :) and they turned out delicioso!

What would Messi do?

Yesterday was Cinco de Mayo and we typically do not do much in celebrating it but we usually have some sort of Mexican food for dinner and maybe a margarita (as this tends to be one of the few times I drink those). I made some yummy Rolled Tacos and Frozen Strawberry Margarita treats (kids friendly) for our family. Jon and Ava have soccer training so they do not get home until after 7PM so Sierra and I eat before they do. Just one of those crazy nights we are not eating together but sit together when they come home to eat. After dinner Ava still had homework to complete and I wanted to take some of the treats down the street to our friends to try, I like taste testers other than my family. Our kids wanted to come so they could see their friends but that didn’t happen since homework was not completed.I ended up staying a lot later then I had planned, but it was great catching up with my friend. I have discovered my treat making has been a little excessive lately, but no one is complaining. Mostly because I have found and tweaked some really scrumptious recipes that I want to try and share them with my friends.My family are great taste testers, but our friends are truly good sports being the experimental testers.
